Looking for an alternative to pasta but still craving linguine with clams? Try using zucchini instead of pasta and adding sprouts. The sprouts give a crunchy texture and help soak up the liquid from the clams and zucchini.
As usual, I'm bad at measuring or taking notes while cooking so these measurements are approximate and can be adjusted to your liking.
Ingredients:
2 zucchini
2 cloves garlic
1 can minced or chopped clams
1 tbsp. olive oil
generous dash of dried basil or a few leaves of fresh basil
generous dash of dried parsley or a few sprigs of fresh parsley
salt
a splash of white wine Directions for 2 servings: 1. Thinly slice or spiral 2 zucchini 2. Mince 2 cloves garlic 3. Drain and reserve liquid from 1 can of minced or chopped clams 4. Heat approx. 1 tbsp olive oil on medium 5. Add garlic and sauté until golden 6. Add zucchini, liquid from the clams, a generous dash of dried basil and parsley (or use fresh for more flavor,) reduce heat to medium/low and stir occasionally for 5 minutes. 7. Add a splash of white wine and simmer for 5 min. 8. Serve and add sprouts. Enjoy!
